The Green Meanie

If you’ve ever been to Peru (or at least to a Peruvian restaurant), you’ve probably tried the Aji Verde sauce: a wonderful mixture of the fruity yet hot Aji Amarillo chile pepper, cilantro, mint, lime and mayonnaise. It’s a sauce that works on everything: roasted chicken and potatoes, ribs, pretty much anything can be made better with a touch of this sauce.

At grilling events around Munich, Avery started making his version of the Aji Verde sauce – adding a little more heat with jalapeño and habanero peppers, punching up the green flavors with spring onions and garlic, and adding a little bit of Parmesan cheese to boost the umami flavor.

It’s definitely spicy, but the reward for getting through the heat is one of the most unique condiments available. Put it on a halbes hendl. Use it instead of mayo on sandwiches and in salads. Dip fries in it. Slather it on our HopDog Hot Dogs. You’ll never look back!
